Hy-Vee begins new expansion Officials with Hy-Vee, Inc., have released information about the company's plans to enlarge and remodel the Vermillion Hy-Vee store.
Construction has begun on a 22,000-square-foot addition to the west side of the building at 525 West Cherry. The expansion project also involves construction of a new fa�ade and a complete interior remodeling of the store, which opened in 1986.
When completed next fall, the new Hy-Vee store will encompass a little over 40,000 square feet and offer new services and expanded product lines, said Cliff Deverell, store director.
"This update allows us to provide customers with more of what they like about Hy-Vee � more variety, more takeout foods and meal options, more one-stop shopping opportunities," Deverell said. "It also creates a more inviting atmosphere for both customers and employees."
The expansion will include the addition of a Chinese Express restaurant, a pharmacy with drive-up service, a floral shop and a walk-in beer cooler. The meat, produce, dairy, kitchen and bakery departments will be enlarged, as will the casual dining area.
Customer service will be relocated to the front of the store to enhance convenience.
Deverell said the store will remain open throughout the construction process, and every effort will be made to minimize the disruption or inconvenience for customers. Hy-Vee plans to hire an additional 50 employees as a result of the expansion.
