Fallan earns purple ribbon for Special Foods entry Kelsy Fallan participated in the Clay County 4-H Special Foods contest held Saturday, June 12 at Yankton High School.
Participants had 1 1/2 hours to prepare a dish of their choice, and coordinate a table setting and meal menu. In addition, participants were tested on their knowledge of nutrition, food safety and food preparation.
Fallan received a purple ribbon for preparing her scalloped corn recipe. Purple ribbon winners are now eligible to advance to the state competition at the 2004 South Dakota State Fair on Sept 4.
Scalloped Corn
Kelsy Fallan
Preheat oven to 400 degrees F. Grease casserole dish.
Mix in bowl:
2 cups corn
1 cup Velveeta cheese, diced
1/2 cup cracker crumbs
1/2 cup soy milk
1/2 cup tofu, beaten
1 tablespoon margarine, melted
1 teaspoon diced onion
1/2 teaspoon salt
1/8 teaspoon paprika
2 tablespoons soy protein isolate powder
Pour into greased casserole. Bake for 50-60 minutes uncovered. Stir halfway through cooking time. Casserole will be browned and bubbly. Garnish individual servings with a sprinkle of paprika.
