Three Clay County 4-H members participated in the contest. Sarah Droegemeier of Vermillion received a blue ribbon for her "Blueberry Oatmeal Pancakes," Eric Droegemeier, also of Vermillion, received a blue ribbon for his "Tofu Shake," and Taylor Lyso of Wakonda received a purple ribbon for her "Ten-Year-Old Chicken Cups." Taylor will now be able to participate in the Special Foods Contest at the South Dakota State Fair in Huron on August 31 and Sept. 1.

Ten-Year-Old Chicken Cups

1 1/2 c. chicken (cooked and chopped)
1/2 c. Alfredo sauce
1/3 c. celery
4 Grands Baking Powder Biscuits
1/4 c. green onion
4 T grated Parmesan cheese
1/8 tsp. pepper
4 tsp. almonds (toasted)
1/8 tsp. salt
Red pepper and chives – finely chopped for garnish
Heat oven to 375 degrees. Toast almonds. Finely chop celery and green onion. In a small bowl, combine chicken, celery, onion, salt, pepper, and Alfredo sauce. Mix well. Press biscuits into four jumbo muffin tins. Spoon 1/4 of the chicken mixture into each cup. Top with Parmesan cheese and almonds. Bake 15-20 minutes or until golden brown. Garnish with bright colors of red pepper and chives.
Blueberry Oatmeal
Pancakes

1 1/4 c. rolled oats
1 1/2 c. flour
2 c. Soy milk
1 T baking powder
1 egg
1 c. blueberries
1 T brown sugar
Combine oats, milk, eggs, and brown sugar. Mix together flour and baking powder. Stir into oats mixture; add blueberries. Pour onto hot skillet. Flip when first side is lightly browned. Cook second side until lightly browned.
Tofu Shake

12 oz. Silken Tofu
1 tsp. vanilla
1/3 c. apple-raspberry juice concentrate
1/2 c. frozen strawberries
1/2 c. honey
1 c. raspberry yogurt
Combine all ingredients in a blender. Mix well and enjoy!
