Vermillion girls do well at
4-H Special Foods Contest The 2009 county 4-H Special Foods Contest was held Saturday, June 6 at Yankton High School. Participants in this contest had to plan a menu, prepare a dish, set the table, and be prepared to answer questions about food safety and nutrition. Two Clay County 4-H members participated in the contest. Kelsy Fallan of Vermillion made "Cheesy Veggie Rice Bake" and received a purple ribbon. Erika Fallan, also of Vermillion, received a purple ribbon with her "Green Eggs and Ham." Both of these participants are eligible to participate at the 2009 South Dakota State Fair on Friday, Sept. 4 at the State Fair in Huron. Try out these award winning recipes for yourself.   Cheesy Veggie Rice Bake by Kelsy Fallan 5 cups California blend frozen vegetables 1 cup corn 1 cup brown minute rice 1 cup Healthy Recipe condensed cream of mushroom soup 1/2 cup skim milk 2 cups 2% Velveeta cheese, diced 1 T. onion or onion seasoning   Spray a 2 1/2-3 quart casserole dish lightly with cooking spray. Set oven to 375 degrees. Measure all ingredients into casserole dish. Mix. Put into oven for 20 minutes. Stir. Cook for additional 40 minutes.   Green Eggs and Ham by Erika Fallan 3 cups spinach (fresh or from a bag) 1/2 cup ham 6 eggs 1/2 t. garlic salt 1/2 cup shredded cheese 1/4 cup milk Dice and measure ham. Mix together eggs, cheese, garlic salt, and milk in bowl with whisk. Saute ham and spinach in frying pan lightly sprayed with cooking spray. Put onto plate. Pour egg mixture into frying pan and scramble. Combine spinach and ham mixture with scrambled egg mixture and scramble together. Divide into thirds.
